Taking Meal Planning Seriously

I told you earlier this week that I am terrible with making time to get creative in the kitchen (then Asian Sticky Wings came into my life and I was forever changed... only a slight exaggeration). Even though I routinely meal plan over the weekend, I definitely lose steam as the week progresses, often opting to turn my meal-planned-groceries into whatever is fast and easy.

Garlic roasted chicken breasts topped with chimichurri sauce? Nope, that's turning into chicken stir fry with hot sauce. Mexican-style quinoa bowls? Yeah that's some healthier version of nachos waiting to happen.

It's hilarious because we actually hung a chalk board in our kitchen, where I write our meal plan every week, all Pinterest-like. And then at the end of the week there is like one 'check mark' next to a dish...since we deviate so frequently.

So, my plan for this week: stick to the plan.

My breakfasts and lunches are relatively easy, so most planning focuses on dinner time. For breakfast, I'd like to say I have oatmeal and fruit, but lately I've been really into the bagels and egg scrambles. I would like to blame pregnancy but I'm pretty sure those breakfast foods sound good to just about everyone.  I make a few scrambled omelettes (yeah, they start off as 'omelettes' until I have to flip them, and then its sort of a scramble folded into a nice shape) on Sunday and eat them throughout the week--could not be easier! Our lunches are usually leftovers. So, onto the dinner plan!

Sunday: Super Stuffed Chipotle Sweet Potatoes, from Love & Lemons

My friend turned me on to the Love & Lemons blog, and also conveniently sent me home with this recipe and all of the ingredients after we had dinner at her house last night, so this is first on my must-make list this week!

Monday: Cheesy Skillet Gnocchi, from Cooking Light

I am a HUGE pasta fan, but definitely like to mix it up so I'm not eating variations of spaghetti all the time, so this gnocchi dish seems right up my alley. Also, cheese and sausage? Yup.

Tuesday: 20-Minute Chicken Enchiladas, from Cooking Light

I actually already made this recipe and have tons of leftovers, which re-heat amazingly and taste delicious. So, this is more of a leftovers night too. It didn't take me 20 minutes because I had to cook the chicken, rather than buy pre-cooked, shredded chicken... but still! All the thumbs up for this one.

Thai food is probably my husband's greatest love... so I'm sure he'll be jazzed that this made it onto our menu for the week. My plan is to make this dish into a bowl, using brown rice, cabbage, and quick pickled veggies to fill out the recipe.
